A delicious snack, starter or part of a tapas style meal. My recipe involves a dry rub and oven bake and then a glaze towards the end of cooking. The recipe is for 8 wings so multiply accordingly depending on how many you are doing or how hungry you are! The ingredients for the dry rub are:
4 garlic cloves (finely mashed to a paste)
A thumb sized piece of Ginger (finely grated)
Smoked Paprika (2 teaspoons)
Smoked Chipotle Chillies (as much as you dare)
1-2 whole fresh chillies or 1 tablespoon of dried chilli flakes
Cayenne Pepper (1 teaspoon)
Combine all the ingredients and mix with the wings with plenty of salt and pepper. Ideally leave for a couple of hours to marinade (or overnight).
Then place in a pre-heated oven at 190-200 degrees C for 25-30 minutes until golden and crisp.
When the wings are cooking get the wet ingredients to make a glaze: 1 tablespoon of each of the following – Honey, Sweet Chilli Sauce, Soy Sauce, Tomato Ketchup and Hoisin sauce, Lemon Juice.
Mix the wet ingredients and this will make the wings not only be hot but sweet, sour and sticky. Cover and mix the wings and place back into the oven for a further 10 minutes. The wings shouldn’t dry out like chicken breast does because the bones and the fat on the skin plus the olive oil all provide moisture. Leave to rest for 5-8 minutes to cool and rest before eating and the meat should be tender and fall off the bone. Enjoy with a green salad or stir fry veg.
